Grape Variety
The foundation of this wine is built on its carefully selected grape varieties. It is primarily composed of Xarel·lo, Macabeo, and Parellada – the traditional trio of grape varieties is used in the production of Cava, Spain's renowned sparkling wine. Xarel·Lo contributes to the wine's structure and ageing potential and Macabeo adds freshness and floral notes, while Parellada imparts finesse and delicacy. Geographical Location
La Cuvée originates from the prestigious Penedès region in Catalonia, Spain, which encompasses areas such as Sant Sadurní d'Anoia, Vilafranca del Penedès, and Subirats. Located in the northeastern part of the country, this region benefits from a Mediterranean climate characterised by warm, dry summers and mild, wet winters. The diverse terroir, featuring clay-limestone and sandy loam soils, combined with the diurnal temperature variation, creates ideal conditions for cultivating the Xarel·lo, Macabeo, and Parellada grapes essential to producing this refined sparkling wine.
Winemaking
The grapes are hand-harvested at their peak ripeness to ensure the highest quality. After gentle pressing, the juice undergoes primary fermentation in stainless steel tanks at controlled temperatures to preserve the fresh fruit aromas.
Following this, the wine undergoes a secondary fermentation in the bottle, following the traditional method (Méthode Champenoise). This process involves the addition of a small amount of sugar and yeast to the bottle, which induces a natural fermentation and creates the wine's signature bubbles developing a rich texture and nuanced flavours of citrus, floral notes, and hints of brioche and almonds.
What sets it apart is its extended ageing on the lees. This prolonged ageing of at least 36 months also contributes to the wine's fine mousse and velvety mouthfeel. The bottles are carefully disgorged by hand, a labour-intensive process that showcases a winery's commitment to quality and tradition embodying the essence of the Penedès region with its refined character and elegant structure.
